Cooling Avocado Cucumber Soup

A cool, nourishing soup recipe that won’t heat up your kitchen. My Cooling Avocado Cucumber soup is quick and easy to make - only 8 ingredients, 5 minutes and one blender. It’s perfect for a hot summer day, when you want simple but delicious!

Ingredients:

·       2 medium avocados

·       1 large English cucumber

·       1 lime, juiced

·       1 lemon, juiced

·       ½ c filtered water

·       1 tsp chopped jalapeno pepper or 1/8 tsp cayenne pepper

·       ½ tsp salt

·       1 c fresh cilantro (stems and leaves), chopped

 

Instructions

1.       Add water, lemon juice, lime juice, jalapeno pepper, salt, and cilantro to a countertop blender; blend until just mixed.

2.      Peel, pit and cut avocados into chunks; add to blender.

3.      Cut cucumber into 1” chunks (no need to peel or seed!); add to blender and blend until the mixture is smooth.

4.     Add water to thin out if needed.

5.     Pour into bowls and serve.

6.     Garnish with ribbons of lemon zest, strips of red pepper, cilantro leaves or chunks of tomato.
